Broccoli Cheddar Soup
Ingredients:
- 1 tbsp butter
- 1 small onion, diced
- 4 cloves garlic, minced
- fresh or dried thyme, to taste
- 2 cups vegetable stock
- 1 large bunch broccoli, cut into florets. Include stems if you want.
- 8 oz cream cheese, softened
- 8 oz cheddar cheese, grated
- salt and pepper to taste
- In a small stock pot or medium sauce pot, over medium-low heat, melt butter.
- Add onion, garlic, thyme and cook for around 3 minutes or until onions are translucent.
- Add vegetable stock, stir and bring to a simmer.
- Add broccoli, salt, and pepper. Wait for stock to come back to a simmer.
- Whisk in cream cheese and cheddar cheese.
- Simmer 5-7 minutes, until all cheese is melted and broccoli is soft.
